How to make wine with concentrated grape juice

If you don't have your own grape vineyard, but want to make homemade wine without all the picking and trampling, try making wine with concentrated grape juice. It's a simple and affordable way to wade into wine making. Instead of buying special equipment, use a large pot and a large solid ball. Although wine cannot win a prize, it will give you a better understanding of the winemaking process. Before continuing, sterilize the pot.

Instructions 

  • Mix 48 oz concentrated grape juice (thawed) with 5 cups of water and 1 cup of sugar in a jug.
  • Put a lid on the jar and shake well mix and dissolve the sugar.
  • Remove the lid and add a packet of wine yeast to the bottle. Put the lid back on and shake the bottle to mix well. Before adding the yeast, read the manufacturer's instructions on adding it to a recipe, which may require hydration in a little water.
  • Remove the lid. Cover the opening of the pot with the ball, in place of the lid of the pourer. Attach the balloon to the bottle by tying the balloon to the neck of the bottle with a heavy chain.
  • Place the bottle in a cool, dark place. The balloon will start to increase while fermentation. It will take about a month. When the balloon deflates, the wine is ready.

Tips and warnings 

  • If the balloon manages to break before the end of fermentation, replace it with another balloon, which has been stung with a needle.
  • Some homegrown winemakers poke the ball with a strong sewing needle about five times, making tiny holes. The balloon serves as makeshift airlocks, allowing carbon dioxide to release, without leaving air in.

How to make wine with high amounts of alcohol

Making wine with high alcohol content can be difficult. Most modern wine yeast, which turns sugar into alcohol, has been raised to produce wine with a content of about 10 percent alcohol. Many different types of wine yeast are available, and you will have to choose the type that suits your tastes in wine. Whatever type of wine yeast you use, you can determine the alcohol content.

Instructions 
  • Prepare the wine must in a one-gallon container according to your favorite recipe.
  • Insert a densimeter and measure the potential alcohol level. For example, if the initial reading is the potential 12 percent alcohol, check the densimeter every day until the reading decreases to about 1 percent. This gives you an actual alcohol reading of 11 percent.
  • Add the sugar and carry the densimeter the 5 percent limit. Read the densimeter every day until reading falls once more than 1 percent.
  • Add sugar until the densimeter reaches its highest level, perhaps 3 percent. Let ferment until the yeast is used, and the densimeter will have reached 0 At this point, the alcohol content is 18 percent, which is considered high for wine. Tips and warnings 
  • Ferment the wine to a slightly higher temperature between 74 degrees and 78 degrees.
  • Also, make a yeast starter mixture. Pour the yeast into 50 ml of hot water, and let stand for 1 minute. Dissolve 1 tbsp of sugar and a pinch of yeast nutrients in 75 ml of water, then once completely dissolved, mix the sugar water and yeast. Leave to rest for 4 hours, and pour the starter into the must.
